Albus Dumbledore in Harry Potter – infuriatingly vague at times, but he of the Elder Wand certainly ensured that Harry got to the answers under his own steam.

Mufasa in The Lion King – The warthog and the meerkat may have taught Simba about forgetting his worries, but his father encouraged him to stand on his own two feet – and learn about the Circle of Life, of course.

Juan Sanchez Villa-Lobos Ramirez (Sean Connery) in Highlander – A Spanish character talking like a Scot and a Scottish character with a French accent. It was a rather confusing film, but at least Mr Connery helped stop Connor MacLeod learn focus and avoid losing his head.

Doc (Christopher Lloyd) in Back to the Future – Marty McFly (Michael J. Fox) learnt more than a few things about time management from his mentor.

Almost the entire cast in Star Wars – Qui-Gon Jinn, Obi-Wan Kenobe and Yoda all mentored about using the force for good and not going to the dark side. But even the Emperor and Anakin/Darth dabbled in career guidance.
